  Moulds
 

Another form of fungus, moulds are multi-cellular organisms. They reproduce using spores, and many thousand species are known. Like yeasts, they do not photosynthesise but feed on organic matter. Moulds secrete enzymes that degrade polymers such as cellulose and starch into smaller molecules that they absorb. Many also secrete substances, which prevent the growth of other microorganisms.

If the conditions are not right for moulds to grow, their spores can lie dormant until they are. Many spores can exist in very inhospitable conditions, such as extremes of temperature.
