1. Scope and field of application
The present standard applies to starter cultures containing different genera and species of micro-organisms.
The present standard intends to define the starter cultures and their characteristics, when intentionally used in the manufacture of food and feedstuffs.
2. Definition
Starter cultures contain different genera and species of micro-organisms.
They belong mainly to :
- Genera of lactic acid bacteria (LAB)
- Other genera such as propionibacteria, bifidobacteria, acetobacter, brevibacterium, micrococci, staphylococci,
- Edible moulds, such as penicillium roqueforti or candidum,
- Yeasts.
3. Physical forms
- Liquid starter cultures
- Dried or freeze dried starter cultures (concentrated or not)
- Deep frozen starter cultures (concentrated or not)
4. Functional properties
In accordance to different use for food and feedstuffs.
5. Labelling
Labelling should conform to EU legislation.
